There was a time in my life when I literally ate muffins ALL THE TIME. No joke. Freshman year of college was a muffin bonanza for me because the muffins they had at college were, dare I say, the bomb. Not the healthiest obsession, but hey, I didn’t care at the time. Muffins speak to all your emotions. When you’re sad, they comfort you. When you’re happy, they rejoice with you. When you’re hungry, they mask that hunger with their muffiny goodness.
While my muffin obsession has long since ceased, I still enjoy the occasional muffin, preferably a slightly more healthy version. I created this recipe while I was feeling ravenous in the morning, giving into my hunger by creating this awesome goodness. I’m a big fan of almond flour for the punch of protein and fiber it provides, but I don’t like how crumbly it makes baked goods so I only used almond flour for half the recipe and regular whole wheat flour for the other half. I also added the oats to give it a breakfast vibe, and chocolate chips because I love adding chocolate chips to pretty much everything. They make everything delicious and make up for the smaller portion of added sugar in these muffins. Just in case you were worried about not enough sugar, haha. Using chips that contain 60-70% cacao is even better to get that extra boost of antioxidants!
