Honey Ginger Salmon with Mango Pineapple Salsa
A heart healthy, easy salmon dish that the whole family will love! The ginger gives it a kick while the mango and pineapple add a burst of flavor to every bite. Eat it over asparagus, quinoa, or your food of choice to make an easy meal.

Salmon
  1. Mince garlic and let sit for 15 minutes
  2. Mince ginger root
  3. Combine olive oil, honey, coconut aminos, ginger root, and garlic
  4. Place salmon in a pan and cover with mixture
  5. Let sit for 30 minutes to an hour
  6. Preheat oven to 425°
  7. After an hour, take salmon out and place on foil-lined baking sheet
  8. Sprinkle sesame seeds, onion powder, and salt and pepper over salmon and place in oven
  9. Bake for 20-25 minutes, or until fish is flaky and easily pulls apart
Salsa
  1. Dice mangoes and pineapple
  2. Dice tomatoes and avocado and combine with mango and pineapple mixture
  3. Add cilantro to taste
  4. Squeeze lime juice over salsa
  5. When fish comes out of oven, serve with salsa on top
  6. May serve over veggies, grains, or anything your little heart desires!
