Peppermint dark chocolate, stinging nettle smoothie
This recipe can be made with fresh or dried stinging nettle – whichever you have access to at the time! This smoothie has a refreshing minty flavor that makes it great for an after dinner snack since the bitter nettle flavor combined with peppermint makes this a great digestive aid! This recipe makes about 2 servings, so just double as appropriate.

  1. Soak dried stinging nettle in almond milk for 5 – 10 minutes to rehydrate a bit, or if using fresh nettle, wash thoroughly.
  2. Melt chocolate over the stove with a little bit of almond milk until completely melted.
  3. Add almond milk, yogurt, nettle, melted chocolate, and peppermint extract into blender.
  4. Top with ice cubes and chia seeds.
  5. Blend and enjoy! It has a rich flavor, and may be slightly bitter depending on the type of chocolate you use.
