Tomato Zoodle Soup
This flavorful soup can be made with ingredients found at your local farmer’s market! (If it’s that time of year). Otherwise, these are simple enough ingredients to find at your nearest grocery store. Feel free to add any ingredients that aren’t on the list that you think would taste great. The tomato juice sort of adds a sweetness to the soup, yet the garlic makes it savory. Hope you enjoy!

  1. Spiralize zucchini and set aside.
  2. Chop garlic, onion, mushrooms, tomatoes, and celery.
  3. Place tomato juice in pot on the stove and gently bring to a boil.
  4. Once boiling, add in zucchini noodles and all chopped veggies, mushrooms, and beans. You may saute the onions, mushrooms, and garlic first if you’d like, but it’s not necessary. Feel free to add more vegetables too such as kale, cooked potatoes, etc.
  5. Allow soup to return to boil, then reduce heat to medium. Place cap on pot and allow to gently simmer for 30-40 minutes
  6. While soup is simmering, cook quinoa in separate pot according to package directions.
  7. About 10 minutes before the soup is finished, add in prepared quinoa and any additional spices
  8. Serve, and enjoy! Delicious!
