Taco Seasoning
Instructions
Squash (may make squash night before to save time!)
  1. Preheat oven to 350°.
  2. Cut the acorn squash in half, and place 1/2 Tbl of butter in each half.
  3. Sprinkle with salt, pepper, garlic powder, cinnamon, and paprika.
  4. Place in oven and bake until butter knife pierces flesh easily, about 30-45 minutes.
Beans
  1. Mix up taco seasoning in small bowl.
  2. Slice up onion and mushroom and place in sauce pan with olive oil. Sauté for 5 minutes over low to medium heat.
  3. Stir beans into onion and mushroom mixture.
  4. Add in taco seasonings, and simmer bean mixture for 10 minutes over low heat.
Salad
  1. Chop up vegetables and wash greens.
  2. Place greens in bowl, and cover with chopped vegetables, handful of seasoned bean mixture, and few scoops of squash.
  3. Add in handful of pecans, salsa, guacamole, and greek yogurt to taste.
  4. Serve immediately!
